What is Korean Strawberry Milk?
“Real” strawberry milk or strawberry latte 딸기 우유 as it is called in Korea has been super popular over the past couple of years. They’re often sold in cafés and you will probably have noticed it in Korean dramas!
It is made in 5 MINUTES with three simple ingredients! Fresh strawberries, sugar and milk! By mashing sugar and strawberries together and leaving the puree to sit for a day or at least a few hours, the sugar will melt and you’ll obtain a sort of puree/syrup. Almost like jam but less firm than that!
You will find Korean cafes making it in various ways particularly when it comes to the sugar amount. Some would barely add a few spoons of sugar, while some would make it similar to jam with a strawberry-sugar ratio of 1:1. Personally, I always tend to reduce the amount of sugar wherever I can if it is not altering taste or texture. I get scared when I see a pile of sugar, knowing that all of that will be ingested, in such a short amount of time. YES, trust me this beverage is almost like drinking a strawberry cheesecake and you consume it one after the other without even realizing it!
Can I use different types of milk?
If you cannot or prefer not to use dairy milk, lactose-free milk, almond milk, coconut milk, etc. would work as well. Choose your milk as long as you use a “standard flavored” milk, or at least one that complements well the strawberry flavor. Soy milk together with strawberries for instance may not bring the best taste combination, but after all, it is just a matter of taste.
How long can I keep the strawberry puree?
If making a big bulk, you can keep the strawberry puree in the refrigerator for up to two weeks. Though you will have to sterilize jars, just like you would if making jam. If you wish to keep it for a little longer, use the strawberry-sugar ratio of 1:1.
DO NOT MIX IN ADVANCE strawberry puree and milk. Once the strawberry puree is combined with milk, it is best consumed within two days.
How to prepare Korean Strawberry Milk?
- In a large bowl, add strawberries and sugar. Using a masher or alternatively, a fork, mash to combine into a strawberry puree.
- Transfer strawberry puree into a sterilized jar. If making a smaller quantity of strawberry puree and consume it the same day, there is no need to sterilize your container.
- Let the strawberry puree sit in the fridge for at least 4 hours – one day is best – to allow the sugar to melt.
- When you’re ready to make your drink, pour 90g / ⅓ cup strawberry puree into a glass. Drop some diced strawberries. Add ice cubes (optional) then gently pour milk over.

Ingredients
- 300 g fresh strawberries
- 150 g sugar
- 6 strawberries, diced
- ice cubes | optional
For 1 drink:
- 90 g strawberry puree
- 1-2 diced strawberries
- 190 ml cold milk (Note 1)

Transfer strawberry puree into a sterilised jar. If making a smaller quantity of strawberry puree and consume it the same day, there is no need to sterilise your container.

Notes
1. You can use any type of milk preferably with a light and neutral flavor.
2. If making a big batch of strawberry puree but not using all of it the same day, keep the strawberry puree in a sterilized jar in the refrigerator and only mix the quantity you need with milk once ready to consume. You can keep the strawberry puree in a sterilized jar for up to two weeks.
